Cool right side up for about 25 minutes, then remove from pan. The spinach was cooked quite nicely, and I do appreciate the fresh tasting prosciutto and mushrooms. I exclusively use the WASC recipe, which calls for baking at 325 for 40 mins and it works out perfect everytime. For sugar syrups and caramel, where I find the reaction speed of a thermometer the most critical, I value the Thermapen, but for most other things 1 to 2 seconds longer is perfectly acceptable.
